I find a similar problem. Some stats don't appear to update. Apparently I have only killed 3 slimes, but I know for sure that it's far more than this. I find the stats very dubious on the leaderboards.

From this and the responses by the others here, probably the best thing to do is just cease to care about the leaderboards at all. On top of max'ing out at a ridiculously low number, arbitrarily resetting themselves, and now apparently not updating at all, one can hardly say that they have any relevance whatsoever for anyone anymore. I wish 4J would eliminate them entirely so that people wouldn't be so afraid to use creative mode for simple things like adding in missing blocks in particular worlds and we can end all the arguments over them once and for all.
I have always felt that a world stat page for individual worlds would be more informative. That way, people playing on the same server/world can compare themselves with their friends (rather than the world at large) under common conditions/rules. They could then individually compare their worlds and, therefore, get an idea how their own performance differs from world to world (say, while playing one world in normal mode and another world in hard mode or while playing in a PVP world vs. an adventure world).
NB: You should also be aware that host privileges used in survival will deactivate the leaderboards. Also, any pre-built mashup world will not add to the leaderboards even if you yourself create that world in survival and stay in survival the whole time. The reason for this is that the developers have used "creative" to do the mashup builds. For example, the Mass Effect mashup world has a large number of diamond ore blocks used in the Mars base build such that people could readily use them for boosting their stats if worlds created using this template were not deactivated in the same way creative worlds are.
The leaderboards are broken. I use to find the stats interesting but the tops are hacked and leaderboards get reset for no reason. Mine have been reset 5 times. I wish they would fix them or get rid of them. When they are working correctly it can take days for stats to update so maybe wait a few days and see what happens. Also you have to actually do the activity to get the leaderboard stat. For instance using an automatic water farm to harvest wheat will not count for the stats.
