Armour, hoes, Flint and Steel, and Shears cannot have Unbreaking.
Armour cannot have Thorns.
Swords and Shears cannot have Silk Touch.
Axes cannot have Sharpness, Bane, or Smite.

Enchantments also seem to be a little buggy.
Efficiency lV Axe mines dirt faster than a Efficiency lV Shoval.

Both of those mine dirt at a blink of an eye. Just curious how you even notice this.

Either you are playing on the PC using an enchanted book or are hacking the 360 version.
...or epic glitch.
