Yes, although the 2nd player will be a guest so no skin or inventory can be saved. If you don't mind dropping everything in a chest before you log out you'll be fine.

Yep, this is how I do all my minecrafting. All you need is a guest account set up and you're away. All skins and inventories are saved. The only weird thing that sometimes happens is that the "guest" player occasionally spawns on top of the house directly above the bed for some reason. But, as stated, you do need to be running the game through an HDMI cable, but you should already be doing that.
