Spider jockeys are a rare, rare spawn wherever the game spawns spiders and skeletons together (1% chance only). I know for a fact, they will occasionally spawn in a regular mob drop trap (spawn floor 2 blocks high), but I know of no way to specifically encourage them to spawn more frequently.
Spider Jockeys have a 1% chance to spawn per spider/skeleton group per mob.
Pink sheep have a--what is it?--0.134% chance of spawning.
You, sir, are wrong.
Depends. Assuming you're sleeping at night and running around during the day, chances are way bigger to encounter a pink sheep than a spider jockey. Just saying.

Is it a chicken or is it a duck? - It's a chuck, because dicken sounds stupid.

And what if you're caving instead? Chances are way bigger to encounter a jockey.
The do-this-or-that's even out and the odds are still the odds--pink is rarer.
I actually thought spider jockeys were in a PC update that the xbox hadn't got yet. I have never seen one on xbox! Going to go through BloodyPhoenix's guide and see if I can't finally get one in my game!

However, that 1% is 1% of whatever the odds are of spiders and skeletons spawning together in the first place. Pink sheep, however, can spawn in groups of only sheep and in groups of sheep mixed with pigs or cows, etc. Really, I don't think the Wiki states any odds here that are truly comparable. In my personal experience, I have spotted more pink sheep than I have spider jockeys; but I do also admittedly find it easier to see a pink sheep in the daylight than a spider jockey at night. Usually, I wind up discovering them by finding out that they are not a pig.
I had totally forgotten about your jockey farm, though, and haven't tried it out yet... Sigh, so much to do and so little time with the Xbox... (Dang, the other people in the house who want to actually watch TV sometimes!)
whats the best way to get lots of spider jockeys to spawn ?
or whats the exact hight to make a floor for them
Spider jockeys are 3 blocks tall 2 blocks wide...they are spiders that have a rare chance of spawning with a skeleton riding it. you cant make a specific mob farm to spawn them but they will spawn if there is enough space but enderman will also spawn as they are hard to find but i think they spawn the most frequent on hard mode

I have had them spawn, however, in my mob drop traps and the spawn pads are only 2 blocks tall. The water channels are 4 blocks tall, but there are absolutely no spaces with a dry floor area in the trap that are taller than 2 blocks. Can spider jockeys spawn right in the water channels? Or can they actually spawn in a space 2 blocks tall even though as a combined unit they are 3 blocks tall.
ETA: Answered my own question from info in the Wiki. They must be spawning right in the water channels. This can be used to discourage endermen from spawning in a spider jockey trap.
ETA: Further reading, however, re-opens the question:
Wiki on Spider Jockeys - "Spawn - Light level of 7 or less, anywhere but slabs (half blocks) or glass."
Wiki on Spawn - "If it's not a squid, then...
the spawning block itself must be non-opaque and non-liquid"
and:
"
the block directly above it must be non-opaque
the spawning mob must not be obstructed by solid blocks, other mobs or liquids"
or whats the exact hight to make a floor for them

You can say that again!. I've played hundreds of hours, on many seeds, and have killed maybe 5.
I have not tested it since TU12, but it's your best bet.
Stay fluffy~

Lol. In this house, we still even watch the "local" news almost every night.
