I made a nether portal a few days ago, but there is no Fortresses to be seen. Am I missing something or am I just unlucky? Do you have any tips for finding them?

It's fairly rare because they are such large structures, but I have seen a couple that have been completely buried in netherrack or with just very, very small areas of exposed netherbrick. If you see blazes in the nether, you should be within 16 blocks of one of the blaze spawners. Blaze spawners are part of the nether fortress so digging around where the blazes are should eventually expose a buried blaze spawner. Blazes can be pretty difficult to dig around though, so you may want to flip into peaceful mode while doing this step. You can also create a duplicate of your seed and look and dig around the nether in creative mode.
Agree with up up. I actually found myself IN one of these fortresses that was almost completely covered in netherrack when I went through the portal. Took me forever to find a way OUT of it
I don't know if the reset nether option resets the fortress, but I'd give that a shot if you really can't find it. Before loading up the world go into options and check the reset nether option.
The coding forces at least a blaze spawner, it will be there somewhere. Just hidden.

it's most likely that a blaze spawner is close to the location where blazes (plural) are spotted. It's a matter of playing the odds... easier to start looking for a hidden fortress where blazes are than where they are not.
There is a small chance that in the Xbox 360 edition that there are no Nether Fortresses in the Nether.
Initially this was true, but when people started whining about not finding blazes, they changed the coding to ensure that every nether has a fortress and blaze spawners.

Unfortunately, unless an update has occurred in which something about the nether generation code has changed between the time the world was first created and the time the nether is reset, the nether that is regenerated will be identical to the first and the nether fortress will be in the exact same location.

A nether fortress isn't dangerous. Its safer than being out in the open with Ghasts.
As long as you find just enough of it to get a blaze spawner and netherwart then those is no more need for the nether fortress really. Don't destroy to spawner, but instead close it off except for a small area you can access the blazes.
Okay well I went out to find one a few days ago. No luck, and I got killed by Ghasts
Are you sure resetting Nether only resets when a major update has happened? Because if not it could be a good solution.
It resets, but you get the same nether; that is, the fortress will be in the same location and the terrain in the nether will be the same. I'm very sure of it, but what have you got to lose? Just try resetting and see what you get.
Yeah, I tried resetting the Nether to try and get two Blaze spawners side by side. (For a massive Blaze exp farm XD). It basically undos any and everything you've ever done in the Nether. Such as, breaking glowstone, any block you've placed. The Nether is still the same as the one first generated.
With the glowstone though, because it is limited(Until you can farm Blazes efficiently) it's nice to go collect glowstone dust, bank it in the overworld and reset the Nether. Rinse and repeat for easy Glowstone. ^.^
