Lol this is interesting. Being realistic if it happened, we'd be dead. The resources of the planet would be used up. We would only be able to dig 256 meters (or 750+ feet) before we hit bedrock, which would be unmineable.
ahh but see theres the beauty we would actually be much better off. water would be infinite and would be pure so no one would ever want fror clean water. trees would grow instantly with bone meal and we could use that to produce charcoal/wood, and really most of the things we would need. we could make cobble stone generators and never want for stone to build with. and animals would breed much faster so we would have a never ending supply of food as well. we would be living in a world with no hunger. no thirst and where the people who would lead and be perceived as wealthy would be the most creative people. war would also see a major withdrawal since through the ages one of the major causes of war has been the struggle to obtain resources.
I am 99% sure I would walk out of my house and be blown up by a creeper. Every. Single. Day.

Religion, has actually convinced people, that there's an invisible man, living in the sky, who watches everything you do every minute of the day, and the invisible man has a special list. Of 10 things he doesn't want you to do. And if you do ANY of these ten things he has a special place, full of fire, and smoke, and burning, and torture, and will send you there to suffer and choke and scream for all of eternity... But he still loves you.
I would put together a band of redstoners and then start making and sending spaceships into space and befriend other species(and hope they dont attack us)and if they do we'll set up a defense system that will blow them out of the sky.
Too many variables. Will the earth be ported into Minecraft? If so, will all the buildings still be in place (in Minecraft form)? Will like in real life you only get one live or can you keep re-spawning? Will you be birthed into a giant starting menu? Will every one be on the same world? Will it be a Minecraft world on a pc, many times the size of earth (some say 8 times, others say thousands, until we all agree, I'll just say many)? If the earth is ported, how will sand paper be ported, 1 paper and a $#1! ton of diamonds? If someone is half way dead from disease, will they spawn with only 5 hearts? Can we switch to creative? Can we install mods? How will the people that never even heard of Minecraft, let alone the ability to play it, survive? Will villagers annoy us every second of every day?

What I'll do is very dependent on the circumstances,
Is earth ported?
Do I get one life?
Am I in creative?
Does health regenerate?
Am I with all 7 billion people on earth?
Will my house be there?
Is there mods?
What difficulty?
Will we still be able to enforce laws? Murder and blowing things up are very easy in Minecraft!
Will height limit increase or will earths natural recourses move and mountains and the sea floor scale?
Will it just be a new Minecraft world?
Will our skins change to what they are in Minecraft, or will our selves be converted? MOST IMPORTANTLY, Will sand paper diamonds convert into normal diamonds?

Well, I suppose the FBI's most wanted list would become filled with known griefers. It would definitely be interesting to see what foods are available at the grocery store where I work. And sadly, both of my dogs would change to the same texture so I'd no longer be able to tell them apart (except maybe by their bark).
