Diamonds are very rarely found as singetons. Where there's one, a bit more digging usually turns up more... So, assuming that the reason I stopped at finding one was because my pickaxe broke, I would build another iron pickaxe and continue mining for more diamonds.

Anyway, if that were the case, it would depend on how the rules for whatever minigame it was were set up... since a built-up minigame/adventure map would be the only time I could see myself trying to play survival for real on a superflat map.
