Just sit back and close your eyes and consider what this game was like back when it was released on day one. When I do that, I pretty much say dang in one year this game is way more advanced than it was when I started playing it.
Now, I am some what biased on my answer because I never seen or played the game on the PC. Each update has all brand new things to me so of course I probably get excited a little more than y'all that also play it on the PC.
I voted the last one but that's not really accurate for my feelings. I am not use to and don't really get the idea of buying a game that evolves. I am the kind of person that likes chess; learned the basic rules decades ago and still enjoy some good competition.. I'm glad to have the game but if I had known there were going to be updates and additions when I bought the game I would have waited for the 'complete' release.

The measurement of how this game has evolved can only be taken from comparing it to the PC. While the complaining isn't as rampant as when the game first came out, it still comes up quite often. While the OP may not have created this thread with any knowledge of the PC version, people here really only compare it to the PC version when talking about how far it has come and how much further we have to go.
I can't honestly pick an option, because I don't feel any of them. I've never had expectations of when the Xbox version should be at a particular update or have certain features. I play the game as it is, make the most of what's there, and when they add new stuff, I adjust to it.

Actually I don't, at least not fully... Xbox is xbox edition and pc is pc edition... I look at how far the xbox edition has come since the start, but can only say it is to be expected due to the fact 4J had a goal in mind to update to a specific version. It really isn't just a port after all, else we wouldn't have certain things from future versions so quickly. Well it is the way I see it.
Sure over all it has to be compared to the pc eventually due to what the pc has is possible to what will go in. I am still curious to know what this different direction will be... I don't really look at the xbox edition and see oh it is behind, I look at it going at a steady pace to begin with, right in what I expected.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
I chose the "A little behind what I expected" only because I expected them to be up to 1.2.3 in the same amount of time (or even a little faster) as Mojang took to take the PC Edition from 1.6.6 to 1.2.3. That, obviously, has not been the case. Am I upset or even disappointed?... not really. I have really enjoyed playing the various versions of MCXBLA as they have been released. In fact, I'm still enjoying playing the version we have now; Perhaps it is because I'm older, but I really don't like it when things change before I truly have had a chance to enjoy them fully.

Deal with it or buy a better PC to play Minecraft on. Those are your two options.
