I agree, boats are extremely unreliable when it comes to water transport as apposed to minecarts for land travel. I can honestly say in my experience operating a boat is much like trying to control a pig with a saddle, you go where you want to and then all of a sudden the pig goes where it wants, much like boats
I'm playing a different game from you then, because I have absolutely no boat control issues out over open water. Sweet and simple control, once my guy is oriented properly in the boat (which can be achieved in a jiffy). The only sticking point is coming to shore, and not stopping fast enough. As I said before, jumping out of the boat just before reaching the shore solves that problem.

Yes, proper orientation. Face the bow. Learn how to slow/stop. Much like IRL " boats aren't cars". Think of GTA on ice. Fast isn't always better. How close are objects to your craft. You don't have a fanboat. Don't just go full bore, balls out, into swamps, and ice areas.
It sounds to me like you aren't compensating the change in perspective (right stick) to the movement of the boat (left stick). The mechanics of a boat have a relative direction according to which way the player is facing.
For example:
If you're facing the bow of the boat, then 'up' on the left stick is foward. If you turn to look left, the bow is to the right of the player, and therefore 'right' on the left stick is foward. Its really quite simple once you get used to it.
i doubt its just operator error. ive been looking directly at my 12 at the bow and moving straight and it will suddenly move sharply left or right for no apparent reason. ive also had it turn a full 180.
it also does things like this when im applying no input so don't say my finger slipped as if im some uncoordinated imbecile. ive been playing fps and racing games most of my life so the idea that my fingers just twitching like a white man on a dance floor would be preposterous.
1- they are faster than swimming
2- MUCH more material efficient than minecart/rail system
3- can be crafted easily early in the game
4- are great for night exploration so you don't have to worry about mobs killing you
5- add another dimension to minecraft travel and make a good reason to build a dock.
6- they make features like rivers into an early game highway
They do take some practice to get use to steering but are overall a great addition to the minecraft.
