I've been playing Xbox 360 minecraft for a few days on survival I've mined all over got most my achievements and such. But I've never seen a npc anywhere on map but bad guys. Never seen a dungeon,treasure anything of that nature. Some stones I cannot find dug all over the place. I have it in normal. I always see same bad guys never nothing new. Every thing I read talks bout villages I built one with roof and doors no villagers ever came. Never see hordes of monsters even in dark there always spread out. Isn't there posed to be dragons and temples and shut too never seen any if these things..my map is totally explored I'm at level 33 in survival. Just any advice be appreciated ...

To see a villager, you need to find a village. We cannot "attract" villagers by making a village. Villages only spawn in desert or plains biomes. If you have completely explored the world, then I'm sorry, but there are no villagers in your world. (You can spawn villagers in with Creative Mode, but be aware that doing that disables all achievements and leaderboard stats for that particular world.)
The only enemies that are in the Overworld (basically where you spawn) are zombies, spiders, creepers, slimes, and endermen. You won't encounter any other different types of monsters without going to a different dimension (the End or Nether). The dragon you are referring to is the Ender Dragon, and it resides in (predictably) the End. It's basically a boss fight.
There are no temples in our version of Minecraft. The Xbox 360 Edition doesn't have everything the PC version has.
You say you haven't found any dungeons or anything of that nature, yet you've dug all over. I feel like you haven't been digging "all over" if you haven't uncovered one single structure underground. Do a little more digging in places you haven't been, make sure to dig all the way to bedrock, as that might help you find some of the ores, or "stones" that you have yet to find.
Hopefully this helps a bit, and below are links to help you out a bit more, they're from the Minecraft wiki. Be aware that most of the information pertains to the PC version of Minecraft and that it might not be one hundred percent accurate.
When you start a new world, there's a pretty good chance (no guarantee though) that there will be at least one village that gets created as part of the whole world creation process. And that's the village(s) where NPCs spawn. Building a village yourself doesn't make villagers spawn, unfortunately (though that might be a good idea for Xbox-exclusive content).
As for the dragon, you have to know that there are basically three different worlds:
1. the Overworld, which is where you start
2. the Nether (think of it as the Minecraft counterpart to hell), which requires you to build a portal made from obsidian blocks in order to enter it
3. "The End" which is a rather small world that you can only enter once you've found the End Portal hidden in a (usually underground) stronghold somewhere in the Overworld and activating it; this is the realm of the Ender Dragon
As for monster hordes, there aren't any. Quite a lot of monsters populate the dark, i.e. the surface of the Overworld at night, and unlit caves and tunnels. However, we might get "zombie outbreaks" where a bunch of zombies spawn in villages and feast on the villagers. That feature is already available in the PC version of Minecraft, but I don't know if we'll get it for the Xbox version as well.
The same thing applies to temples. They're in the PC game already, and we will probably get them in the Xbox version as well. If and when, however, I don't know.

If you want to get to the dragon, get at least 1 stack of enderpearls by killing the endermen. Then build an obsidian portal and go to the Nether. Find the blaze spawners at the top of the Nether fortress, a large dark purple structure. Kill enough of the blazes to get at least a stack of blaze rods. I suggest snowballs, as they are very effective. Go back to your house and craft the blaze rods into blaze powder. Then combine the enderpearls with the blaze powder to get eyes of ender. Get suited up in diamond armor if possible. Bring along your best swords, pickaxes and a lot of blocks and food. Then, go outside, and throw an eye of ender. Go in the direction it headed for a while, then throw another. Continue this process until the eyes are gong down into the ground. Dig down until you come across stone bricks. You are now in the Stronghold. Explore it. When you find a room with a silverfish spawner, mine the spawner and complete the portal by putting 12 eyes of ender into the holes in the portal blocks. Hop in. You just went to the End! Good luck. Tip: Break the Ender crystals at the top of the obsidian pillars. They explode, so be careful.

Is it possible that when you generated the world you unchecked the "generate structures" options? If so, then you will not have naturally spawned villages, a stronghold (so no End portal), mine shafts, or dungeons.
Just make a new world dude! NPC villages are good places to camp out for a while. And dungeons are random. Just go into a lot of random mines. If you can find an abandoned mineshaft, I've noticed that I've found a lot around those.

Some "structures" are not actually controlled by that checkbox. Consider the lowly tree; in game terms, it is a "structure" - a group of blocks that generate together in a predefined pattern. Caves are also a type of "structure" by this definition. I know these generate no matter what, and have heard it said that dungeons will always generate as well; however, I have not confirmed the bit about the dungeons.
As far as not being able to create a village, here's to hoping we get zombie villagers soon!
