I've noticed while playing that people only cut down the trees that they think they want. I'm here to explain what tree is best for what.
Oak trees: These trees are the usual trees we see. You could find them practically anywhere. Use these trees for oak wooden planks (Mostly admired through MCX360 players).
Birch trees: These trees are the least favorite throughout the Minecraft world. It's planks look awfully bright, which is a sign that attracts mobs. I would advise using this wood for fuel, mostly charcoal.
Spruce trees: These trees, in my opinion, are the most valuable types of trees found in the Minecraft forests. These trees are found in the snowy biomes, and are extremely tall. They make an excellent, dark colored planks that are great for camouflaging. They are also helpful in the means of fuel, and burn well.
Huh? I cut down whatever tree I need and that I can get.

3. Dont assume that birch is the worst tree, many of the forums including me think this is one of the best plank colors, they never grow a GIANT tree so its easy to collect them,
Overall, each tree matches the type of gameplay of each person.
Every plank has the same value (1 block) and for fuel its the same (1.5 blocks) so no plank is better than another
I prefer oak trees early on in the game because there is a chance they will drop apples (and I usually need the food) and they can grow into large trees that are preferable for quickee tree houses for shelter. I prefer birch trees when building underground tree farms because they don't grow quite so big as the oak trees and not as tall as the spruce trees. I prefer spruce trees if I'm landscaping on the edge of a desert because the leaves stay the same nice green color nomatter what biome the spruce is planted in... and I hate two-toned trees.
Oak trees are the most common tree in the game, but they don't spawn naturally in taiga biomes (so they can't be found everywhere). I don't think MCX360 players "admire" oak trees any more or less than PC players. I don't find the birch tree planks "awfully bright" and like using them, particularly for kitchen area floors. I also have seen many attractive builds that use birch logs. The effectiveness of any camouflage depends on the surroundings. E.G. Armies use green camouflage for forested areas and beige camouflage for deserts. Similarly, in a desert setting, birch planks probably work better as camouflage than spruce planks.
All right. I'm just talking through my experiences. If you think different, you're more than welcome to just say it. If you think Birch is a nice-looking tree, I'm not holding anything against you.
Oak Maybe plentiful more than the rest, but like others said it is not everywhere. I use this for a medium tone where wood is concerned. But in a farm I don't really make too many above ground as cutting down the bigger ones is sometimes time consuming with pillars...
Birch is best in a furnace to a degree because you can grow them without worrying about height, as you will be able to cut them down quickly without having to pillar. I don't really use the wood itself, but the planks and such I use for a lighter tone. Especially good for a desert road along side sandstone.
Spruce is something I do like having but like oak I would have to pillar up a bit, however not as much as oak at least. I use the wood and planks as a darker tone if not an out right accent to what ever I build.
For things like fence, doors, and stuff that colored wood does not matter I use birch since it is easiest to acquire when you have a farm of each. Maybe the most simple would be a better word. I also use them for charcoal for that reason when I don't feel like mining for coal.
Overall each wood type has their uses in building, on a survival minded person there is no difference usually... A tree is a tree...lol Well it is the way I see things.:D

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
Birch is the easiest to farm, so that's the bulk of the wood I grow. I have a smaller section of my tree farm dedicated to Oak, with a glass canopy to limit the height of the trees. Spruce unfortunately is absent from my world entirely.
Birch trees are definitely my favorite. Like some people have already said, they're the easiest one to farm because they don't get that big. In the worst case, meaning in case of the largest birch tree possible, all you have to do is to jump on the lowest block of wood and mine the highest one. Also, I really like the brighter color when using planks, stairs, etc. Combined with spruce planks, you can really create some good looking structures.

Not sure where you got the "light colors attract mobs", in game theoretically wouldnt they be repelled as they dont like bright things, torches, the sun etc and stick in caves. But anyway i like birch trees for the reasons stated above and simply i like the bright look, especially when next to a darker block(spruce trees). But honestly the tree depends on what its being used for i think, everyone just has their favorites.
I have not found light colors or even light sources do anything to attract or repel mobs. You only find fewer mobs in well lit areas because they can't spawn there (they have to spawn nearby and wander in). Skeletons and zombies do attempt to avoid daylight if there is water or shade nearby, but that's about it . . .
So, no, birch planks do not attract mobs. And no, torches do not "repel" mobs . . .
I love birch they are my favorite, that's my opinion. You shouldnt think yours is everyone else's opinion. The birches are nice because they arent crazy tall, they make good wallpaper, and personally i like the planks. There are plenty of flaws in you thread which has been pointed out, but good idea.

um... so light colored materials attract mobs... what? oh no.. my house made entirely of white wool.
