This has probably been asked before but I didn't come up with an answer when I Googled it.....Can you deactivate the end portal once all the eyes of ender are put in? I broke all the bricks in creative trying to close it and that didn't work. Maybe I'm missing something?

Placing blocks on it will make it go away after breaking it.
Do they have to be gravity blocks like sand or will any block work? Also, can I rebuild the portal after destroying it?

The portal itself can be broken in Creative. You just...punch the nine portal blocks (the frames can stay).
