I havent been here for awhile so idk if this was answered but why do I need xbox live just to play minecraft? I can play it without live at times but thats only when I was on live then disconnected from it. Like right now live is down for I believe everyone else besides just me and my friend and my two solo games both need live to play(skyrim with dlc(thats another topic) and minecraft).
If you bought MC on a different console, then you need to be online to play, logged into the purchasing acct. You can transfer game licenses to your console, so that you can play anything you own (except indie games) offline. Google "Xbox 360 license transfer".
Here is a link to the Microsoft Xbox website explaining all about Licenses and how they work. It also has details on how to transfer licenses for games and other things to your Xbox 360, which will allow you to play things offline.

Good point. I forgot about the scenario of "not original xbox of purchase" and "not the original purchasing player" possibility. Xbox Live would definitely need to be checked to verify that you are legit or not, in those 2 scenarios.
Choose, Continue playing offline. When you are prompted by the " Gamer profile not online" popup. Then you can play offline without live. You will have to have a profile on the console to play though.

I might expect it to contact MS during it's first time to run, or in the demo version.
Note, Indie Games (not the same as Arcade games) do require contacting Xbox Live.

Or try to play on a save that you put on Cloud without an internet connection.
