Water and ladders won't work, they will damage the enderman. You need something that will reset their drop height without inflicting damage. Vines is the only thing that comes to mind. If you dont have vines, go to a swamp biome and plant some trees. If you don't have a swamp biome, new world or creative.

you can change it to a upside down pyramid shape so the endermen get pushed down a level untill they reach the middle then drop. which would erase the need for the vines, since they would all fall from the bottom piston and take the same amount of damage.
The wiki page does suggest an oak tree planted in a swamp will also usually have vines. "Both small and large jungle trees, when grown, usually have vines growing off them. Oak trees planted in swamps also usually have vines".
somehow I doubt that works on the xbox version as of yet... although would be nice...>< every tree "oak" i have planted in swamp has not had vines on them... it is just a regular tree... They naturally generate in swamps... but we will not be able to grow them like that.

Go plant 200 saplings in a swamp and tell me how many grow their own vines.
You could use cobweb to catch the enderman and maybe a pison to push him out of the cobweb afterwards. It will take some manual work but i think it will do.
I've used ladders in my (Docm77) enderman farm, as I don't have a swamp biome in my current world either. I occasionally get an enderman that dies on impact, but the majority of their drops seem to be getting reset with the ladders.
I only have one layer of ladders. Opposed to the 2 layers of vines suggested by Docm77.
Sometimes there will be a stray enderman that stands on top of a ladder, but they eventually despawn, teleport, or drop. I only have 4 layers of spawning pads, and seem to get plenty of endermen from that.

Would ladder work? There aren't any vines in my world and I really would not like to get one from creative just yet.
I suppose, but those on the wall could hit the top of the ladder and take damage and possible get stuck there.

I thought the collision was updated....
And then they updated it again. Vines are really the OP's best bet, but ladders would probably work in a pinch.
So the ladders again have a collision mass? hmm... must have been one of the 2 most recent updates that did that...Makes me wonder....
And what point would having man-planted trees in a swamp do?

That sounds like a lot of work... Have you done this? If so, wouldn't it be easier if you tell us your results??
