It is big enough.. but not like they show to do it on the pc.... you can't get that far off the island/s You have to light the crap out of the island/s or tear them down... Basically make it to where enderman can't spawn anywhere else...use light.. half slabs or water.. Good luck.. The one on my server works great!

By no means is water easier.
Torches are the best thing to place to keep Endermen at bay.
(Also the building limit in the End is the same size as the Nether, although you can fly out to the Overworld limit.)
Exactly. You'd essentially have to place water source blocks wherever you would have placed torches, so it would just be more difficult. I covered my entire End with torches using almost exactly two entire inventories full of torches, so about 4600 torches.
My End was really irritating, though, because while it did have a top portion that was easy to cover, it also had tons of small, floating islands surrounding it, along with an entire bottom and side portions made of small, hidden areas where Endermen could spawn.
Anyway, it took me about 4-5 hours to completely torch my End, and my Enderman farm works nicely. Gets me from level 0-30 in about 5 minutes. So I definitely recommend the torch method.
I only see one island in my end.
I'm sure you could try building outwardly and make a new island.

Why not use some of both?

Mine has a few islands. But I decided just to light up the main island since the end is so small.
