My first shelter is usually a cave dig out of small hill (hobbit style ). After I'm set it is expanded with brick walls, oak plank floor and huge windows. I also like big glass dome above topmost rooms.
For aesthetics, I try to build houses with different materials for the floor/roof vs the walls. Namely, because the crappiest houses are the ones made of all one material (dirt or cobblestone usually).
Therefore, the simplest trick to making a better house is to make the floor of one material, the walls of something else, and the roof of a third material. If I'm light on materials, the floor and roof will be the same (given that in a multi-floor house, one story'ceiling is another story's flooring)
In a survival game, I'll likely use cobblestone and wood, as those tend to be readily available in the early stages of the game.
Though in a pinch I've dug a hole to make a shelter, I'm not keen on it as it's too easy to neglect decent building standards for the sake of smart/efficient tactics in survival.
My current house is boring coblestone 3 floor castle type thing but gound floor is made of blue marble (lapis blocks) with circle (square it is minecraft) of gold blocks round the spiral staircase this was my first ever minecraft build so next one i can push boundries a bit more. Was ass done in survival
I play Survival so I will build a "cottage" out of all wood styles. Once I'm established I then move to a new area and build a brick house. Leaving the cottage behind.

i think we should all use common sense and logic when we answer and ask a question but always stay open minded
just cause science fails to explain something does not mean its real (afterlife,big foot, ghosts etc..) does not mean its fake try to stay opened mined instead of closed
Can't remember who first suggested it, but the method I always use now is to build an emergency shelter from mud as soon as I spawn, get a load of cobble, then find an ocean and build a floating cobble base which can only be entered via a waterfall in the floor. So many times on survival i've built a base and then spend too much time repairing creeper damage, or negotiating with local mobsters! My floating base will ultimately end up with everything I need including farms, mob (passive and aggressive) spawners and a minecart terminal taking me to key parts of the map. When I need something such as coco, I build an extension and make a coco farm, etc. Just started a new map with a friend who is playing for the first time so I wanted to be sure that, whilst I can be careful, he didn't bring any creepers home for tea!

Now that we have a bunch of different sandstone and quartz textures, emerald blocks, and cobble walls, it's really fun to experiment with different blocks. I'll generally pick two materials to build a house out of (one mostly used as framing and roofing and the other for walls and flooring) and then use another block type or two as highlights. Spruce planks and sandstone houses with emerald block highlights are fun, and so are oak planks and brick houses with quartz highlights and cobble wall pillars. I also had a birch plank + nether brick house that I used mossy cobble + mossy walls for the highlight blocks... that was interesting contrast, I thought. I really wish I'd had the presence of mind to take screenshots before getting rid of that test world because I loved how the roof on it turned out, too.
