Personally I use only birch. I have a large deck around my current main house thats pure birch. I did just cut down my first spruce, and may use that in the future.
I use oak because it's the only tree that can grow right next to each other. I have an underground tree farm so I don't have to risk myself chopping down trees.
I use all three, but it depends on what I'm building with. Birch planks and spruce logs, oak planks and nether brick, spruce planks and sandstone/stone slabs are my favorite combos.

The fleshy kind.I use a three-way combo for max purdyness while using up less space.What I use all depends on the location and surrounding block types...
