I don't kill:
*zombie pigmen unless I have a bow and am at a place where they can't get to.
*villagers because I don't see the need.
*Wolves because I really like them, even when they get in the way.
Wolves and villages just because I don't really see any need to. I think I've killed one squid in my whole time of playing Minecraft. It's too annoying to go swimming for them.
I don't kill wolves or ocelots, because I love them.
I don't kill Mooshrooms, because they're cute in a strange way.
I usually don't kill creepers unless I can fly away easily.
There is no mob that I will NEVER kill. I'm almost positive I will kill them all at some point or another.
However, I don't like killing:
tamable mobs (wolves and ocelots)
villagers (though I used to think it was funny to kill them, now I just walk into their house, look at them funny, and walk back out)
mooshrooms (except in my farms, in the wild I won't hurt them)
sheep (because I don't want extra wool)
zombie pigmen (I don't want them swarming me, and they seem to not be very forgiving even when you leave the Nether)
Endermen (in the overworld after I get to the End)
There is only one mob that I will harm FAR less than others and that is the wolf. That being said I will harm wolves if the eat all my bones, or if I want to just have fun, other than that I will attack anything and everything.
I won't kill wolves and I don't believe I've ever killed a villager. I also have a hard time killing any animal, especially pigs. I've recently started killing cows to try using the cooked beef, but my conscience gets me in the end... I can't wait for potatoes and carrots to be released because man cannot live on bread alone.
I don't kill Snow Golems because I made them and I don't kill wolves. I don't really like wolves though as they are a annoyance on multiplayer which is why I don't tame them.
Killing villagers and wolves is rather pointless, so I don't do it. And I also don't kill pigs (unless they're running around at my construction site and get on my nerves) because they only drop meat. I get enough meat from cows and chickens and they also drop leather and feathers, respectively.

I was wondering if there was anyone else who has a mob they will never kill. For me it's the pig because for the longest time, I would use the pig skin and not harm a single one of my "brothers", but now I no longer use the pig skin although the no pig killing rule has stuck to me.
I pretty much kill everything besides Iron Golems (are they in the Xbox 360 edition?) and Villagers. Having these guys against you is very counter-productive. Anything else I will indeed kill, every mob serves its own purposes, even zombies, wielding the legendary potato and carrot in their loot tables.

Ooh good point, zombie pigmen are awesome, I could never kill a zombie pigman. Also, in the rare circumstance that a normal skeleton spawns in the nether, or a zombie pigman spawns in the overworld, zombie pigman will kill skeletons if the skeleton accidentally shoots it. Anything that kills skellies is a friend of mine!
Villagers. I once had one leap off a cliff into a cave and became so distressed that I exited without saving and lost a fair bit of work just so he wouldn't be dead. When I reloaded the world, the idiot jumped a second time; but this time I looked down the hole before I exited without saving. Turns out that the fall didn't kill him, so I built him a home in the cave where he landed. I once found another one stuck in a water hole and spent an entire Minecraft day trying to shove him into a minecart and building a rail line so that I could get him back to the village and safely tucked away in a house. Even though they are really just a pain in the behind at this stage, I probably could never bring myself to kill one and I seem to be inclined to go to great lengths just to save them.

I'm glad you enjoyed it. I just checked on the one in the hole the other day. Still there in his comfy little house I built... looking grumpier than ever. Once trading comes in, he'll probably only ever offer me coal even though I saved his miserable life (lol).
