I have tried to make a roof with the red ones. just grow them and then chop if they are not in the right place but i didn't think about the piston idea and gave up trying to fill in the little gaps.

i've built a moden style house with giant mushrooms... i used the brown ones for the floors and ceilings of the rooms, and left the red ones for the hallways... worked nicely, though i never did finish decorating the interior of it... i even went through the hassle of building a piston elevator (design gotten from youtube for the PC, i then modified it for the 360, so it's kinda a hybrid).
To OP, yes even using silk touch you will only get the mushroom blocks with the pores on all sides. Only way to avoid this is to do like the others have said and use a piston to push them, or maybe just plan out where you want to use it in your build, and grow the mushrooms there.

If you want the red blocks, use bone meal on a red mushroom. Then use pistons to move the block.
They do on the PC not sure about the Xbox edition though...
They don't...for now.
As previously stated, a painful amount of piston work will be required....
