I have 1 map, I explore and get the whole map explored. So my map is complete. Once My map is completed It displays the full world right?
The world on Xbox is smaller 864 x 864 does that mean that once I have a fully explored map I have no need for a new map as the one i have will show the Whole world?
That is correct. It's not like on the PC where you create new maps to cover different areas of the world as you expand your exploration of it. The option to craft a new map is there on Xbox, but it would really only be useful to you if you happen to lose your initial map or if you want to create a map for the nether (by making that map while you are inside the nether).
The four corners of your original map are the four edges of the world.
Once filled out, you've been everywhere in your world.
Creating a new Overworld map regardless of your coordinates will still have the centre at 0,0.
But you can always create Nether and End maps if you like maps a lot...
Does that mean that I have no use in creating another map?
If I get my map filled it will display the whole world?

Stay fluffy~
or is that just me?
more so in the nether..i get lost in there
Which is exactly why I have a full map of each.
(The End actually is Overworld-sized using Creative, so I wouldn't necessarily say it's "small.")
