Yeah real simple. Just create a 'water gate' using pistons. What I mean by this is setup some pistons with water behind them and have it to where you can step on a pressure plate, or flip a lever, and have the water flow over your wheat. Make a pit one block deep for collecting. The only thing not automatic is replanting the seeds.

The farm would have to be somewhere with no sunlight.
Then you would need a way to destory the glowstone or whatever light you
have growing the wheat. It would work better with Redstone lamps...
Get what im saying? Let them grow in light.

You could have the floor where the wheat is planted Laced with sticky pistons,, and just allow them to PUSH UP.. and bam all the wheat disconnects.. and you're done. (literally just thought of this)

But other than that....um not sure.
This is the method I used and it is dependale and easy. Yes you have to replant manually but very little tilling of the land is required. There are several you tube demos on the build. Good Luck I did some looking here is the build I used
