Before you write this off as one of those "tell me what you do" topics... It's kinda more than that. This is more specific and I want to see if there are others like me who don't do the big projects everyone likes to do but is at that stage where you try out small projects.
Basically, for me:
-Cave Diving [primarily for resources, but been doing slime farms and been suprisingly having fun messing around with caves with my little brother]
-Mob Slayer [last two days made two different mob farms, also fun with brother for randomly going out and attacking mobs because he asks]
-Restone Scientist wanna-be [well, I used to make traps but more specifically, I'm trying to mess around with redstone lately and create awesome stuff. Waiting to at least be pretty good with this before attempting ANY massive project]
-Explore N' Go [not really "exploring" but I'm expanding what I do as I go along. My house is a bit empty feature-wise, but it's a tall building in the middle of a slightly expanded mini-lake surrounded by a glass fence. First I created a tiny house, then skyscraper, then nether, then farms and mob farms, one point went all the way around seed, etc. Basically? I do lots of stuff xD ]
The rest is me just ranting and saying how I noticed the different playstyles... so don't have to read xD
What about you guys? I had a friend come into my map with a stronghold, and then later I gave him the seed. In the first 20 min, he [with me getting resources for him] made a platform on the water [where the stronghold entrance is] and made an "awesome" tower that wasn't just a plain rectangular cobblestone tower. THEN a couple days later, he played on my map again and built two and a half structures that beat mine: a decent house, a mushroom tree house, and a gravel road. I pretty much still have the same empty tower xD
However, in my defense, instead of building I play more on the different types of difficulties and like surviving. Him on the other hand? More minecraft experience and loves to build big, fancy buildings.
I do anything that will either help me on my world and just have fun. I just finished an enderman farm the other day, which helps tons, then i decided to get two pet pigs for my house, because I can. (Hamlet and Kevin Bacon)
I'm a map-maker, so I do everything from massive terraforming to coming up with...different colour combinations you wouldn't expect...or I just make Redstone stuff that half of my map players don't understand....

Try 99% of the fanbase. But, one subject of study is not necessarily better than another.
OP: Just a small annoyance of mine, but I think 'Redstone Engineer' would be a better term to use. I know many redstone engineers, but a very very small percentage of them could be considered scientists in the field.
I'm primarily a potholer. I usually build only a small one-story hut with a basement where I store all the stuff I find, and keep exploring caves. More often than not I soon end up with more than enough cobblestone and coal to build a really nice castle, fortress, or whatever, but hardly ever do it. Instead I keep potholing.

i only play survival and i like to create towns with friends.. i dont really do those "mega builds" but i have built a few sports stadiums in my cities
My play style is all over the place. Whatever has my attention for as long as it can keep it. Almost always on survival (prefer to keep it on hard even though there's very little difference), only using creative when I need to on a limited basis. All of my builds have been on survival, though none has ever been completed. I dig. A lot. Sometimes terraforming the area I plan to put my builds on. Dabble in redstone contraptions. I would consider myself low to intermediate understanding, still grasping how to make some of the logic gates interact. Mostly, I just work on whatever idea pops into my head or I read/hear about.

True...I think only one person figured out a rigged a BUD switch to a furnace and no-one has figured out the Jukeboxes....
