Well I know there are a couple of ways to keeps mobs from despawining in the PC version of minecraft, but i have a really big project going on in the xbox version that i really want all my friends to play and it requires the mobs to not despawn. Is there a way to keep mobs from despawning in the xbox version?
The only way passive mobs will not despawn is if they're contained in an area where they cannot move more than 20 blocks in any direction. As for hostile mobs, they will always despawn. There is no way to stop it.

Do you think there might be some kind of update in the future where they might have an option for something like mob tags?
I doubt it. The Xbox 360 is very limited in it's capabilities so having a massive amount of mobs that don't despawn would probably crash your game.
They could have a cap on the animals you can tag and have a message display when you hit that cap so you can't have too many. It would also likely cause the other wild animals to despawn instead of your own.

That is how the breeding system works now for the most part. Animals you breed will not despawn provided that you've put them somewhere they can't move more than 20 blocks. As you breed them, it approaches the passive mob limit. Once you hit that limit, you can't breed anymore and passive mobs will stop spawning out in the world.
