for the planks, slabs, and stairs yes.... The wood itself, no.
Like the person said above, you would need specific types of trees in order to make each type. So that feature, as well the craftable nether bricks can be accessed on old worlds. Most things new that are in the crafting menus will be craftable in old olds. The only exception to this is if it is something that spawns or drops from something that doesn't spawn in your world. Stuff from the end, if it happens to be a 1.8.2 world or earlier. That was just an example.

You simply make planks. If it's a spruce tree it will be dark brown. If it's an Oak tree it'll be normal color and if it's birch it'll be light beige looking.

Yes, I believe any old planks will remain their original color... and I too would be annoyed if my wooden plank builds became randomly multicolored overnight.

My guess is a drop down selection, like for the different tools.
From my notices, if it's in your hotbar that stack will be made into planks first.
