I work almost exclusively in ravines, the cave systems since 1.7 are far too much like swiss cheese and not enough like caves. I find way to many ore deposits in caves that are a quarter of the size they should be because of the "open-architecture" cave spawn logic.
Regarding the issue with mobs falling down. That is why you start at the top and light the tiers as you work your way down. Like this or this.
Additionally, mining out paths around the tiers provides me with more than enough stone for surface building.
Hmmm...This surprises me no one has said anything about ravines helping them obtain ores...

Especially if your mining. I was mining coal ore once underground and had no clue that I was mining above an underground ravine, until I broke the block directly beneath me. Then the only sound I heard after that was the sound of every single bone in my character's body breaking as he hit the ground.

I like ravines just fine. They add a welcome change to the sometimes boring cave systems.
One world I use has a triple-ravine. All three are connected end to end at various heights and angles. The entire thing must span over two hundred blocks.

Seed: 20877
On the west side of the map (all the way to the coast, about halfway up, between two villages) One ravine that opens (partially) to the sky. This ravine connects to two distinct (but also connected) underground ravines that reach all the way to Y12. All three ravines connect to multiple abandoned minshafts with melon seeds, cave systems and multiple spawners.
The seed also has a stronghold that I haven't found yet (confirmed through eyes of ender) and a nether stronghold with netherwort and multiple blaze spawners.
the only downside is this area is an extreme plains biome surrounded by extreme mountains. you have to go halfway across the map to find trees - so you'll need to plant your own forest.
Ravines are kind of a nuisance to me since I tend to enter them from the bottom. It's much easier to conquer a ravine starting from the top. Otherwise, they're pretty boring to me, I think they're way too stupid-common. I did fall in love with one ravine that I found just underneath the desert surface. It's entirely underground and has a sandstone stalactite ceiling, it's gorgeous. I tamed it and made it my tree farm.
I found this thread as i was searching for how people have made use of ravines. I've started a new game in a plains type of biome (Shrubland from Biomes O Plenty) which has a number of surface ravines that seem only moderately deep. As my game this time is to emphasize use of the terrain, I want to develop my first mining operation using the ravines quick access to a lower Y level.
From my own observations and from the comments here I have the following thoughts:
1. Build a 3x3 gallery at regular depth intervals (at y is divisible by 5) all around the edge of the ravine. This will produce ample cobblestone and create a "circular" hallway open to the ravine as a kind of view/courtyard. Into the walls of the ravine I could dig out various rooms with a mind to import villagers at a later point if this is feasible. This is one of my goals in this game, to create ample architecture such that villagers can be sustained there.
2. Use the floor of the ravine as a mob trap. Keeping the floor dark with the upper gallery lit might make for some fun. Or implementing a waterfall system that pushes mobs into pits that can be switched on or off.
3. Decorate the ravine with waterfalls (not to excess). Perhaps, these could be part of the mob trap system. I find that the naturally spawned springs and falls sometimes need a little adjustment as well so that they run through a channel and not look like someone left the hose on.
2: They're one of the few 'structures" that generate. It's not an actual structure, but it's generated similar to one, like a mineshaft and whatnot.
If MC had more structures spawning, I probably wouldn't even care about ravines, but seeing as it's one of the few semi-interesting things that spawn for me to find.. I don't mind them, just because it's so rare to actually find ANYTHING.

I don't really mind ravines, I mean, I usually play on Peaceful because I like to play the game at my own pace(Don't get me wrong, whenever I do turn monsters on I give myself a challenge and play on Hard, on my leaderboards I'm on top of everyone at everything in my friend's list on hard) but they can get annoying, I like it when they make things look cool, but otherwise I don't really care for them. The resources are hard to get to and I usually just end up getting the resources on the lower levels.

i would love to have boring cave systems
Caves are more interesting than Ravines...
Due to the fact that Ravines are just one big room with spots EVERY where mobs can spawn.
