I think I'm up to either 165% or 170% for game, and I keep it around 115% for the menu. I slowly add another 5% every so often to slowly adjust to the quickness until I'm used to it, then up it again.
135% game sensitivity, 120% interface sensitivity. I would have it higher, but, like it's been said in a previous post, it doesn't seem to scale that well. 200% to me is more like 2000%. I normally have sensitivity in games very high, but not in Minecraft.
Unless i'm playing a FPS (i.e. halo or borderlands) i just stick with the default sensitivity, more out of laziness than anything else... I could turn it up to be more useful, but it's fine where it is, (though i do play with maxed gamma, helps when working on peaceful as you don't need to carry torches to tell what ore it is)
Default. I have to carefully place blocks quite often, (for example, on top of redstone torches) and anything higher than 100% increases the probability of mistakes. Not to mention you can end up accidentally breaking the wrong blocks and such. Not a huge problem, just irritating.
I think 160% game, 135% interface, but I don't remember.

Pretty much the same for me. I use the defaults most of the time, except for the gamma. However, I don't max the gamma out, usually just bump it to about 85% regardless of what difficulty I'm playing on... and use a lot of torches. Some of the controllers I use on different machines are wearing out, so I'll play around a bit with the sensitivities until I get something that feels right... whether that's up or down from the default just seems to depend on whether the individual controller feels loose or sticky.
Very interesting guys. Seems like i'm the only one who play 200%. lol thats because I play call of duty on a 10-14 sensitivity.
I probably could, i used to play quite a few MMO's on PC where the steering was linked to your mouse position (if you so choose, it offered greater control) using a trackball mouse that had a sensitivity through the roof (move it more than an 1/16th of an inch at a time, and my character would spin like a top sometimes. Only took me a few days (8+ hours a day though, i was hooked pretty bad) to get used to it.) so if i played around with it, and fine tuned my control, i probably could also...
