I just make simple rectangular houses occasionally with a mossy cobblestone floor, but I always try to go for the Nether theme. My roof is usually burning netherrack or a watch tower to snipe mobs. I always have several snow golems in there as well. (I get lonely)
I used to like to try to build into mountains, but now that all we have is Extreme Hills, I find it pretty difficult to find a mountain area that's attractive to me. It's harder to find good land-locked mountains, and we never get the types of canyons and gulches I used to love building in. With mostly flattish land being the place to build, I usually tend to build with pods. It starts with a basic hut-pod, which I dig out a storage area underneath.
It's a modular form that's easy to add onto when needed. I usually expand the first floor and then add a second floor for my bunk.
Once I start expanding, farms, enchanting rooms, brewing stations, etc can easily branch off with little demolition required for renovations.
I build nice little paths and fences later on, and tend to lay down roads in planning for a town to start, for example in that picture you can see a wheat farm and a small rail station in the background.

I like making decorative houses, but i make underground houses usually. On servers people tend to set them on fire. Houses on mountains are hard to get to, underwater houses are easily destroyed, and houses that are in the sky tend to make me fall.

I found a great mountain seed, the range is in the center of the map, and it truly has the best mountains/extreme hills i've seen recently. Try the seed 206723179 and you can see for yourself the mountains. (btw, at 191, -239 there is a deep hole in a mountain with water 7 blocks deep, though the sides are sheer, so bring blocks or tools to dig your way out if you jump/fall down.)

I'm afraid that seed appears to be entirely ocean, although there was a pretty impressive mushroom island cliff.
It seems i forgot the 1 at the end, so the correct seed is 2067231791. sorry about that... hate it when i miss a single number from copy & paste... Should works now!

I like grand buildings as I am artist by nature. I did start out in a wooden shack when I started my map over three years ago when I was a newb at MC during the good ol' Survival Only days. Times have changed, I must say.
I've recently being trying a weirder style of building with acacia fences. Not impressive in words, but they huts look pretty cool when you see them. I'll attach a screenshot if I remember
Yup same here its almost like a ritual when starting a new map, building a shack that is.

If you don't build your entire house out of obsidian in hard survival you're not really serious about minecraft.
