Here's an idea. Find an image that you'd like to build (it can literally be anything) and use Spritecraft to turn it into Pixelart. Just search Google for Spritecraft, and you'll find it, or PM me and I can send a direct link. That's what I used to create a 64X64 image for one of my multiplayer maps. I designed another one for an arena on the same map, but I don't know if I'll implement it.
Suggestions? It will depend on your likes/dislikes.
But in general, the most popular pixel arts here in the forum are videogame characters or anime characters. There are many Gamers/Otakus around
Just take a look at the Pixel Art Megathread and try to get some inspiration.
One more thing: The maximum size of a pixel art on the Xbox is 300x300 blocks. Don't make anything bigger than that or you won't be able to view the whole pixel art.
