Does it affect mob spawn rates, mob spawning range or anything else that would have an effect on a mob trap.
In other words, will my mob harvester work any better on hard than normal?
No, it does not affect the spawn rates or the mob caps. I have run my mob drop trap on all modes and there has been no difference, on average, in the spawn rates.
You can also starve to death on hard while normal leaves you with 1 heart
Thought it was half a heart.... since on easy isn't 1 heart or is it 3... confused..
Other than what everyone else mentioned, there really isn't a difference yet. I just hope eventually there will be more defining differences, like the one you mentioned; spawning, and maybe how their AI goes about finding you. Those two would help in separating the modes more that is for sure among other things... One can only hope anyway.:D

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
This is incorrect. THey have the same HP across Easy/Normal/Hard difficulties.
Not necessarily I have tried it on each difficulty on one world I gave myself a stone sword and a set of full leather armor no enchantments.
I opened the world on easy got hit by a zombie and then tested how many hits it took to kill it then wrote down the results and repeated the other difficulties.
i lost my EXACT results but each time they took longer to kill and dealed out more damage.

I opened the world on easy got hit by a zombie and then tested how many hits it took to kill it then wrote down the results and repeated the other difficulties.

Exactly, it changes the amount of damage you deal, but if u were to crush them it would take the same time.
The series I am doing on Youtube is on hard http://www.youtube.com/ZOneNOnlyGaming If you have no armour it can be very dangerous and the Nether is near impossible as one of my videos proves I spawned by 4 or 5 ghasts blasting at me as soon as I went through the portal the first time, however I dont know if the difficulty actually effects spawn rates I could have been super unlucky
No difficulty at the moment does not have anything to do with spawn rates unfortunately. Would be nice if it did though.

No, spawn rates are the same. The only difference is damage
