Also, I'm sure you probably didn't do this but, don't turn off buildings or mobs in your world. As I recall, turning buildings off with exclude mineshafts, dungeons and such...

I've never found them in dungeon chests... only in the chests found in mineshaft corridors.
I believe you are mistaken. I believe dungeons do not contain melon seeds
