I've recently started playing on "Hard" and find the experience preferable to other difficulties. I used to play mainly on peaceful or easy, but stopped because I felt the game was becoming too...well...easy.
I started a new world specifically for the difficulty change and have been scared to explore the land, so the majority of my map that has been exposed is due to my extensive branch mining underground.
In spite of my fright, I've been enjoying the game a lot more; even though traveling into the Nether is almost impossible (them ghasts.)
I tried to convince my roommate to play on hard, but after a night of being stuck in a villager's house with a skeleton at the door and a spider and creeper at each window, he deemed hard difficulty as "dumb" and switched back to easy.
I prefer easy. I don't switch it to peaceful for any reason. So I can only imagine how hard i'd be to build a gravity grinder with mobs fallin on top of me while on "hard".
I like the fact they are there(monsters), but I don't want them overpowered messing up my creations.

I switch between easy and peaceful, depending on what I want to do. Lately peaceful has become kind of boring, so I'm challenging myself to working up to constantly playing on hard.

been playing hard exclusively for over a year. i have found that placing the portal in an underground cave in the above world seems to be mirrored in the nether and will likely put you in a cave in the nether. also put the portal cloase to the middle of the map. that's the best way to transport to the nether in a relatively safe location and still be able to locate the fortress.
dogs can be a big help exploring; especially when you are away from your base overnight. with 2 dogs leather armor a bow and sword i can go anywhere.
I flip around all the modes and difficulties just for the heck of it. Personally, I see very little difference in how the game plays on easy vs. hard. It doesn't change what sorts of monsters spawn or how many monsters spawn. The only difference is that the monsters do you a little more damage and it takes an extra hit or two to kill them. As long as I keep my tummy full, I'm probably OK in any difficulty level at any time. Creepers usually blow up on me anyway regardless of what difficulty I'm playing in; wearing enchanted armor makes even that a non-issue in hard. Once the zombie siege gets into the game, hard may play comparatively harder than the rest since light won't stop them from spawning inside the villages.
I would like to see some difficulty levels in between Peaceful and Easy, so that only some of the hostile mobs would spawn. This would make it easier to convince some of the more timid noobs I play with to try out Easy level, since they wouldn't have to suddenly deal with all the variety of hostile mobs at once.
I play Easy. There is nearly no point in peaceful for me because if I want to build something, I just go to creative, not survival peaceful. Screw the leaderboards.
Bumped it up from normal to hard when TU7 dropped. I've been enjoying it. Early on, it occasionally got frustrating when I'd decide to go exploring at night, but by the time you have some real weapons/armor, you can easily move around regardless of time of day.
I keep it on easy because honestly, I find the combat aspect of Minecraft tedious, but peaceful has ZERO challenge. I'm also starting new worlds frequently, so I spend most of my gaming time underpowered which means Normal difficulty is just a nuisance and a half. Once things get comfortable and easy enough for me to start thinking about Normal difficulty, I'm usually bored with the world anyway and want to try a new seed.
I play on peaceful and easy. Usually though it is my primary world that I have peaceful on, and only change to easy when I need mobs to spawn & kill, like slimes...
For the most part easy is what I play on with my other maps. Gotten have something other than my builder map... Even though they end up that way anyway, although I have to say that I still on easy...:D
I am more of a builder so that is the primary reason I play on those two difficulties.
Creative is something I hardly touch, unless I want to test something. Haven't yet had the chance to do so but one of these days I probably will, so I keep that idea in mind.

I haven't yet felt the monsters are too easy to make the change up to hard... I'm sure it will come eventually.

I've yet to find any dogs in my current world; but I do have almost enough diamond for a full set of armor. Will be exploring soon.
