I bought Minecraft on the release date and today for some reason my Minecraft turned into the Trial version instead of the full which won't let me access any of my saves
Does anyone know a solution to fix this? I thought about deleting the game and re-downloading it however I was afraid i'd lose my saved world's
First, try to play the game online and then offline. When offline, you may not be able to play it because probably you are playing it in a different console from the one where you bought Minecraft. If the problem persists, you can delete and re-download the game with no problem, you won't lose any of your saves. It may fix this issue.

I went to storage and tried to delete it but it keeps saying "There was a problem performing that action"
You can delete Minecraft without deleting your saves.
This is correct. Navigate to System -> Memory -> (your default storage device) -> Games -> Minecraft. Under that, delete only minecraft, but not the saves.
Nope it just said it couldn't perform this action
I went into My Games and deleted it but now it won't let me redownload it without purchasing again or just downloading the Trial

Are you doing it in the same console where you originally bought MC?

Are you the one who bought it? Or did someone else buy it?
If someone else bought it, that is why you can't redownload it. If you are the one who bought and you're on the same Xbox 360 you did it on, contact Microsoft.

I bought it and it is in my download history I tried downloading it from the Xbox Site and it still doesn't seem to work
I'll just try re-purchasing it tomorrow and if it doesn't work I'll contact MS and get down to the bottom of it
Access your download history via the console, not a pc. The only legit reasons this should be happening were described above. Sounds like either you are having a fault or you are playing on a different Xbox than the original license was bought on or you weren't the original purchaser, and whoever DID purchase it originally transferred the license to another Xbox recently.
When the XBLA games get a patch, they also seem to double-check the software license at the same time, so if the license was transferred by the original purchaser between patches, it would continue to work until the patch de-licenses your xbox's copy.
I've never had it happen, and I actually play on a different Xbox than I purchased it on. If I'm signed in to live, it works.
Unfortunately my Internet is choked until Wednesday so I probably can't play on that Xbox until then because signing in might be impossible!
I also no longer play on the console that I was using when the game was purchased. However, I can play offline on this console with no difficulties. I have also had absolutely no difficulties downloading both TU7 and TU8 on this console. That is, the patch did not de-license my copy on this console; but I'm not sure if that is what you were intending to imply though.

You shouldn't have to repurchase it. If it's in your download history; but won't download, contact Microsoft support and have them help you sort out the problem with your account. Just trying a bunch of "stuff" without contacting them might mess up your account even worse than it is now.
Hm, if you never transferred the licenses over to your new console, that shouldn't work. Perhaps you used some option like "associate this gamertag/profile with this console?" which I seem to recall seeing sometimes.
My gamertag is still "associated" with my older 360, so I can play all its content offline. I downloaded my profile to the newer Xbox but the profile itself had to be logged in to live to be useable I think.
Perhaps when you associate a profile with an Xbox you can play games your profile had licenses for when offline. I'd imagine then that if someone else were logged in to that Xbox they would see the trial version.
We DID transfer the license onto the new console. My son's gamertag (Gold account) purchased the game (for me) on our older console. When we got the newer console, he transferred the license and redownloaded the game onto the new console. This was the only one of his games he transferred since he was wanting to get me off his console so he could play his other games (and he refuses to play Minecraft).
Now, I play on the newer console using my own offline profile (no account) most of the time. If he signs into this new console and opens a world, I can then play online in that world as his guest. This requires that he be signed off the old console (that is, he cannot be signed into both consoles at the same time). I know that when the updates were released, he made a point of signing in on the newer console and opened Minecraft and updated the game for me without any difficulties.
I do believe he can still play Minecraft on his old console (since the game was not deleted from it and he still owns the game); but I cannot play offline on my own anymore on that old console. I do not know whether or not he can only play Minecraft offline on that console or whether he could still play online if he is signed in on Live. I haven't checked with him (so I'm not absolutely sure), but I also think the game will also update on his old console if he signs in and opens it up.
How precisely he did the license transfer, I don't know. He's is particular about keeping everything to do with his Xbox account legit, so I'm very sure that he did not "mod" anything to do this nor would he ever intentionally infringe on the TOS.

If you bought it on another Xbox 360 than the one you're current;y using, you need to do a license transfer. http://support.xbox.com/en-US/xbox-live/marketplace-and-purchasing/download-content
