Back when MC360 first came out, the dispenser duplication glitch made most of the achievements incredibly easy to get.
I don't have time to host my world anymore, but I can tell you an easy way to get both.
Getting the "When Pigs Fly" achievement:
1). After obtaining a saddle, find a pig and enclose it in a 2 high perimeter. Be sure to save.
2). Dig down at least 20 blocks in a 2x2 fashion within the perimeter.
Remember that 20 blocks can do the job, but its safer to dig down further as you are wanting the pig to die.
3). Get back up and SAVE.
4). Now saddle the pig and slap him till he goes in the pit. Sometimes the pig is a bit unwilling and may die before jumping in... If that's the case, just reload your world and keep trying.
Note: with this method, you will most likely die upon impact of the fall damage. Unless you don't care about losing EXP, exit and reopen the world and you will still have the achievement and the saddle.
For the On the Rail achievement:
If you don't have enough iron to build a super-long railway, I recommend copying your world to a flash drive and opening the COPIED under creative. This will not affect your main world. Under the copied world, open it in creative and look for an abandoned mineshaft. Write down the coordinates and open your real world back in survival. Navigate to the mineshaft and start grabbing iron and rails. Once you have enough, dig a long 2x2x2 tunnel underground and lay the rails. Be sure to light it appropriately as monsters will spawn.
Note: I suggest laying the railway underground as it becomes a large pain above ground with mobs spawning on the track as you try to get your achievement.
