1)Why is it sometimes when you surround water and cover it over, when uncovered it's dry down several layers and other times there is still water under the blocks?
2)Is there a way to tell which type of water your dealing with?
3)Also when you place a block mistakenly that breaks the waters surface and remove it you get this "tidal eddy" of water moving is there anyway to make it still again?
**note question 3 is 3 blocks out along a shoreline
1. not sure exactly what you are asking...Elaborate, or clarify?!
2. yes, still water is still flowing water is not still, plus flowing water tends to be at a lower level than still water. Still water is also known as a water source block, and that is what you can pick up with a bucket.
3. yes. you would have to fill below it till it is 1 block depth and then place a source there. Dig out the blocks underneath and should be fine.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
Question 1 Redo OK I dropped sand in a square 5 x 5 to the surface of the water and built out from shore in thew same manner dropping sand in a 5x5 both had water remaining in the center 4x4 area i then filled in the TOP layer with dirt. When I then dug out that same dirt 4x4x1deep the shaft built from shore was completely dry down to what had been river bottom and the other 5x5 shaft that was not connected to the shore was only dry down 1 block. Why?
hmm... could be a generation bug... especially if it was indeed a river and not the ocean biome. Then again it might be part of the generation to have spots of shallow surface that just have 1 source block there and the rest empty. All I can really say is that relates to how the seed/map generates; all in the equation/algorithm that makes each. Also some areas that are marked as swamp might have that effect, unsure though, as there are many places that are shallow and it is possible that the generation got mixed up somehow or shortcutted itself.
that one is something I am totally unsure of beyond the fact that it has something to do with seed generation. So with that one I don't really have a clear answer, so your guess is good as mine...><
