I saw on Youtube and most of them are on The End, I want to make one in the overworld

You can not make enderman farms in the overworld. The reason they work so well in The End is because enderman are the only mob that spawn there.

The healing towers aren't mobs. The Ender Dragon only spawns once. It is understood that you can't make a farm for the dragon..
