Will I still be able to play and update Minecraft on the 360 even when the 720 comes out? I love the game, but not enough to get a whole new system..

Yes, I'm pretty sure you will be able too.

I'd start saving now for the new system (you got like a year or so).

Yes, at first you'll be able to play MC. However, eventually it will be upgraded to 720-only status (or MC360 will be "abandoned" and a new MC720 will be released). If nothing else the members here will demand at the top of their lungs that MC be upgraded to take advantage of the additional features of the new console.

The first part is easy, as of course you will be able to continue to play it as long as you have a 360. The updating part, no one can answer. I think we all assume it will be but 4J could stop making updates once they hit their announced target which will occur be the NextBox/720 is even available. The updates don't generate any revenue for 4J, so I would not be surprised if the current target is the last free update.
