I'm getting the same issue, I get the bug significantly more on Multiplayer whether or not I'm the host or in somebody's world. I also get it on singleplayer, though it's significantly less.
The work around I found for myself at least, is to use melon or any non-playcable item on the stubborn block... just try to place the melon slice on the stubborn block while it is selected. I hope i explained that well.

all you really have to do is press LT right after RT when mining blocks. i'm really glad this works, now i don't have to abandon my new map right as i was getting into it!

And now, since I downloaded the update, reappearing blocks and doors splitting in half appear in abundance. It's frustrating and has actually caused me to just shelf the game until a fix comes out. Which sucks, because I adore this game.
This sounds like lag. It doesn't happen to me on singleplayer or when I'm hosting (with a crappy connection), but when my friend is hosting it happens all the time.

TU7 It is different, and more aggressive in a way. The blocks reappear, but do not go away. It is a block update issue I believe, or at least a guess to it, since that is what is happening. It will not go away unless you update that block itself. The resource you gain from it is another difference sometimes, as this one always you get the block, but the block that was mined just stubbornly reappears.
Now if it was lag, then why is the block not going away on its' own? This is one reason I am calling it what I believe it is, which is a block update issue, which means probably something wrong in the rendering engine or similar. Probably something that they just happen to not realize was modified or effected, as this bug/glitch only seems to happen to be when playing long enough on worlds, whether I save often or not.
At least there is a workaround for the TU7 one though which I also mentioned in the bug thread and above in another reply...

So those worlds affected by this specific one can continue on if they want, that is if they want to go through the trouble of doing this. Sure beats reloading the map which also corrects it as well.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
It is certainly not lag. The telltale sign is that the mined blocks do not disappear unless you update the block again. If a person is lagging then the blocks eventually disappear. All these people dismissing this bug as lag should re-examine their deinition of "lag".
This is definitely a bug and hopefully 4J is replicating the situation and working on a fix for it.
Hey, I just saw a thread, THIS and might be the problem, but I'm not sure.
The world could be loading so many signs, that this may be what's causing it.

I believe that this is not lag but a chunk update problem... A friend and I had the same problem to the point it was unplayble... My friend got the idea to go to another base on the map to see if it was the same there, and what do ya know.. He got about 50 blocks away and the glitch went away. He then went back to the original spot and the problem had cleared up. Please try this and see if it helps. I'm assuming you will only have to get far enough away to unload the chunks that the problem is in.

Confirmed, works for me. The problem will some times come back after awhile, but if I just leave the area and then come back it clears up again. It's annoying but I guess it's the best that can be done for the time being.
I hit this problem last night. Single player, not online so it's not lag. Xbox 360 verison. I came back from the Nether (my 3rd portal) and a creeper suprises me by blowing up...then this weird thing happened where I could see through the ground. I could see all the lava underground, passageways, everything. Super weird. Eventually that cleared up and I went to go mine some coal, and it kept reappearing. My pick axe broke and kept reappearing as well, just like with the OP. I exited without saving, repeated the sequence but managed to doge the creeper. Still I can't mine coal and my pickaxe reappears after breaking. I tried rebooting the xbox and loading again, same results. Definitely not a server issue.
Oh, also this was a new world created just after the recent update.

My save point is in the nether. The problem happens when I come back to the overworld to mine.
The annoying thing about that is then you have to run back to a chest, unequip all your armor, load all your stuff into it, just to exit and reload. Super annoying.
I play online all the time and I've had this happen only a couple of times. In fact, it actually saved me from a creeper blowing up. But the few times it has happened have been for only a couple of seconds. I had the door glitch up once, and it was fine after a minute.
Ok, the corruption must happen when I load the overworld after returning from the nether. Then if I go back to the nether, and return to the overworld again, eveything seems fine make sense? hehe.
1) Load saved game (online is greyed out/unchecked because I'm not connected to XBox Live)
2) I'm in the nether next to a portal
3) Go through the portal to overworld
4) portal is in a mine, go up to surface and a creeper blows me up
5) I can now see faraway through the walls, mining blocks doesn't work, blocks reappear.
6) go back to the nether through the portal
7) Come back to the overworld again.
8) everything is normal. Can't see through walls, mining works normally.
This is SINGLEPLAYER. no online. No other players, no server, etc.

People talking about chunk loading. It has been demonstrated that chunks do not completely unload on the xBox (probably due to the code to support spiltscreen play). This is different behavior from the PC, yes; think of it as a feature. As such, people that are clearing the problem by walking away and coming back are not "unloading the chunk" they are reseting something else. In order to help we need to figure out what is being reset.
You can have lag issues even in single-player offline. This is because Minecraft XBLA runs as a client accessing a server process (4J has confirmed this). Thus, if some other xBox process is interfering with the ability of the client to communicate with the server, it would mimic the effects of "lag" even though the player is in single-player offline. What kinds of things can interfere with this communication? external downloads from xbox live - chat features - etc. It has also been demonstrated by Nose_Job that the server process can get so "busy" with maintaining the world (water effects, pistons, etc.) that it can forget to communicate with the client. (Nose_Job's experiment involved flooding a superflat world and then using the sprint feature to sprint intobedrock.)
Try to keep these things in mind as you experiment on reproducing and dealing with the issue in on worlds.

Confirmed, works for me. The problem will some times come back after awhile, but if I just leave the area and then come back it clears up again. It's annoying but I guess it's the best that can be done for the time being.
