I am having this problem with killing them. I hit them once or twice then they poof away somewhere.
Any tips on easier kill's, I'm trying to get ender pearls!
P.S. Endermen suck when they dont chase you for looking at them!!
Don't F**K with them until you get a enchanted sword if your fighting them in a cave. They can sneak attack you any moment even though they are no where in sight. If your fighting them on land get close and don't look at them until you attack. If they teleport try to spot them and be prepared for them to teleport to you. If you can't find them defend for about 15 seconds. After this time it is probable they touched water and aren't hostile to you anymore until you strike again.
I mainly mount my attacks in open areas like fields and such so they have no where to teleport out of my field of view. Enchanted sword really helps, I have a diamond one with sharpness IV two-three hits will kill an enderman. Just know that they teleport behind you so when they do teleport turn around and keep the pressure up. Also try for critical hits.

Then don't use Grass, Dirt, Sand, Gravel, Clay...mushrooms, or--God forbid--TNT. o-O
As for how I fight...first strike is always critical...followed by massive smacking.
I try in caves, but usually they teleport off.
Stick to the fields....
I always use an Iron sword or Diamond sword before I attack one.
When i start attacking, i always just walk up behind them trying to avoid any eye contact incase they turn around. Then i just got crazy on the right trigger. Depends what difficulty your playing on too though. If your on hard it will take a while and you'll have to defend like others mentioned.

Either have a nice Diamond Sword or a bucket of water.
I like that bucket of water idea. Is water an instant death? And if not, can they still teleport while in water? Also, big up to Burnie Burns' kid for giving Notch the idea for the water weakness. "Drunk Tank!"

I find that the bucket of water usually makes them just teleport away... never to be seen again. I try to figure out the places around my home base they like to move blocks to and build little 2-block high safety areas for me. Then, if I see one, I attack it and retreat to my safety zone. Since I've angered him, he usually teleports in front of my safety zone and I can keep striking them each time they return without taking much damage.
Build yourself a 4X4X1 skyblock 2 blocks off the ground. It will look something like this from the side

Find an enderman and shoot him with a bow or throw a snowball at him. Hide under the "skyblock" Punch him tilll he dies, Once you aggro him he will continue to try and attack you even though he can't reach you because you are under the overhang.

I suggest getting 30 experience points this can be sone so by simply killing other mobs using the furnace and mining valuable minerals EVEN COAL! Once you get these points go to an enchantment table if you don't have one they are rather easy to make look it up on youtube. So once you get the points put it on the bow all of it on the bow, this will make the arrows flame the target or burn the target this will eventually kill the ender you are after.

Xp is not a problem for me, I have a xp grinder And many enchanted items! Bow's dont really work, But i have yet to try 1 with fire aspect or whatever it's called! Will try that to!
Me too. I find Endermen quite a challenge.
But! I know how to beat them. Just follow those simple rules...
Step 1. Get flint and steel.
Step 2. Look for an Enderman.
Step 3. When you find the Enderman, go towards it holding your flint and steel, making sure you look DOWN.
Step 4. When you think you are close enough, look at the Enderman and catch it on fire.
Step 5. Look where the particles go and follow them.
Step 6. Repeat it until the Enderman dies.
Step 7. Get you Ender pearl.
