The End isn't in 1.0.1. The End portal is for some odd reason though but it doesn't work. And if you follow a cave you can find a stronghold. If not use the eye of ender. This is the same way on PC.

It's there so you can create a world and not have to make a new one to get to the End in the next update.

Yes, I'm not talking about the current version, I'm talking about changes that need to be present in the next iteration.
Also, you can't find a stronghold if one doesn't generate on your seed, which is a depressingly common occurrence on the XBE.
Kind of off topic, but will I have to continue making new worlds every few updates?
It's beginning to be tedious rebuilding my house, my farms, my portal, hunting for crucial materials...
After the update that adds The End and the jungle biome there isn't anything major getting added to map generation. or at least thats my opinion. I don't know what the XBox will get after that anyway. Witches Huts, Jungle Temples, Desert Temples and such are shiny but not necessary to me.
Come to think of it, it might actually be that structures like fortresses are the last thing generated in a world. I have to things that could serve as proof.
1) In a previous world, I had one corridor of an abandoned mineshaft cross a ravine - it looked like a bridge, actually.
2) The Nether fortress in my current world is mostly engulfed in netherrack; it's right outside the windows. Yet there isn't a single netherrack block inside the rooms and corridors of the fortress.
This means that the only real problem is that sometimes structures are generated too close to the edge of the level. NPC villages are the best and most obvious example for that. And it also happened to my aforementioned Nether fortress - the only blaze spawn is in spitting distance to the bedrock wall.
I think there might be a priority system for generating terrain features. Ravines rarely break mineshafts, but strongholds and mineshafts seldom play well together, and ravines and even sometimes just simple caves just run straight through strongholds.
And yeah, structures spawning too close to the world edge could be a problem, too.
