Whenever I see an enderman, I quickly make a 3x3 roof just over my head (only 2 block spaces underneath). Then I stare at the enderman to get his attention. He will teleport to me but can't really hit me because of the roof and I kill him. You won't get a lot of pearls, but I have found it to be the most effective way so far since we can't really build a farm until we get the End.

O and also I thought endermen were supposed to chase you if you look at them? Mine don't!
