As the topic suggests. I believe in the PC version you can combine two beat up Iron Helmets for example to make one less depreciated helmet, and also I believe mining now gives experience in the PC version, as well as Emeralds existing, trading with villagers, zombies attacking villages. Here are all my questions in a nice neat list:
-Are items combineable, and if so how do you do it?
-Does mining give experience, and if so is it only for expensive ore? I tried on coal and iron and nothing.
-Are there NPC villagers now?
-Is there emerald ore?
-If yes to either of the above, do you need to start a new game to spawn them?
-If you haven't been to the Nether in your saved game, will there be new features in the Nether (fortresses etc) or is the Nether spawned when the world spawns, as opposed to the first time you travel to the Nether?

Yes mining does... It just is not a whole lot of xp, and it is random how much you get... Iron and gold it will not work. on the other ore types it will, and the xp gained is based on the ore. diamond being the most I think.
There are other ways to gain xp, like breeding, and using the furnace. The furnace also has an xp thing where it depends on what you cook in it.. The xp gained from all this is just a small amount, nothing compared to actually fighting hoards of mobs...

6 - The nether generates as soon as the world does at the start, thats why you enter it so quickly, so you need a new world to spawn the new fortresses
The map generates as you discover it. This is true for both the overworld and the nether. You can enter it so quickly because chunks are smaller, vertically, and contain a lot more "empty" space.

You get XP from mining any mineral.
Minerals such as coal, lapis, redstone and diamonds will give you immediate XP as soon as you break the block.
You get XP from iron and gold after you smelt it in a furnace. XP rates vary so you might get a little or sometimes a lot.
