Pretty pointless in my eyes. I guess it is cool with multiplayers or Hunger Games, but in single player, I find them pretty pointless. Enchantments are more than enough to take on an enemy. I like lighting mobs on fire with the Lv 14 Sword
For enchantment levels it's very hard to do, but the minecraft wiki has translations for each word and or saying. Try to figure it out I guess. Unless, it's just a guess.
I like potions, if you know what you need to use they can be very useful. Take a potion of swiftness for example, very good if you have it as a splash potion, cause if you're about to die then you can sprint away quickly. Health potions are very useful. Also, a fire resistance potion in very good for going in the nether. On that off chance you fall in lava, you won't die. Each potion has it's own positives and negatives. I think they will be very useful in singleplayer.
8 Minute fire resist potions are awesome when going to the nether, or even caving if you have a problem falling into lava. Swiftness is great for traveling. I've just started to use splash potions of damage II also to add some extra damage to mobs. I play on hard and to me they are very helpful in their own ways. I encourage you to play around with them.
