Technically enchanting is magic, and brewing is science. All of these we'll get in the next update... Redstone machinery exists, and Redstone theory could be considered a science as well.
It's no secret where Minecraft is headed, but if you want to see the road map just look at the later PC versions. Anything they've included in the updates up until 1.2.3 will be coming to the Xbox. We might get a few Xbox exclusives, but I doubt 4J will deviate too much from the original game.
Minecraft is going? I doubt it will be going anywhere at the moment. Since it is well liked on both PC and xbox, I believe it will be a long while before it goes anywhere.... Oh you meant what is in store after the 1.2.3 update... That is different. We prolly won't know much on how till we get up to the PC equivalent 1.2.3 update. From that point on it is said to lead off in its' own direction. I guess it all depends on the community and what 4J can or will put in after that.
I'd rather answer this when we at least get to the 1.2.3 update to really know what we will end up with in the future for xbox version. O_o

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
Minecraft XBLA edition is going to the PC version of 1.2.3
Then it's probably going to go its own route, adding in unique features that the Xbox version has exclusive and stuff that are highly requested versions of it.
Gamespot reports that all three versions have hit 17.5 million in sales.
There's the "hardcore" version (PC).
There will be the "more competitive, family oriented" version (xbox, per Burns).
The "squeeze in whatever we can" version (mobile).
It's not about what we few diehards here want- it's about what the other 16 million people want.
I don't have a crystal ball so I'm not guessing.
But I do know that those of us thinking (after 1.2.3) that they're going to be able to play the PC version on the xbox are in for a major disappointment. (Course, on the other hand, the PC folks won't have any of the xbox stuff either.)

Mods.
I can almost 100% guarantee that 4J won't be bale to come up with something that hasn't already been made into a mod on the PC. If they do, someone will just make a mod for it on the PC. When modding is involved, nothing is exclusive.
(Just as a point of reference, there are 121521 topics in the mod section. That is a lot of mods and ideas for mods that have been floating around since 2009. It will be hard to come up with something original for the Xbox 360 Edition)
Up to the point where 4J get the 1.2.3 update into the game, the future is pretty clear... we should get whatever the vanilla version of the PC had in it to that point. If we don't, it will likely be because they are unable to fit the full game to that point onto the XBox itself and keep the game running smoothly. If there is room for more game on the XBox 360 after that, 4J have indicated that they would like to take the game in their own direction. CEO of 4J, Paddy Burns, also indicated that they were leaning towards making the game both more competive and family-oriented... whether that means they'll introduce more science or more fantasy, I have no idea. I do believe, however, that whatever content they opt to add will be geared to keeping the game pretty much "G" rated (in order to keep the ERSB rating at 10+).
I also believe long-term plans are to develop a Minecraft version for the next generation of XBox console, which by all early reports will be significantly more powerful than the current one and, at release, will probably be significantly more powerful than the PCs many people currently own (since this will likely be a selling feature of the new console). The demand on PC seems to indicate that people prefer a more customizable game, so I think it would make good business sense for the game to move in that direction... i.e. more ablility to utilize custom options (in the form of developer-produced mods sold as DLC).
