When endermen move flowers about and then set them down, do they replant them? If so, is it possible that they sometimes try to replant them in areas that are too dark or on blocks that are not appropriate (e.g. wooden planks). I'm continually finding loose flower drops around my world where I am playing single player, offline and am looking for an explanation for the phenomena.
I noticed the dirt blocks the enderman move still retain their grass...I havent noticed any loose flowers personally. I would guess that when an enderman picks up a block with a flower on it, the flower just drops into sprite form. That is really the only explanation as any other mob can't remove flowers.

i ve noticed loose flowers, but i put it down to a flower 'dying' and becoming loose ?? maybe from a previously unloaded chunk and its too dark etc
That's why I was first thinking... but then I found one on my boardwalk around my home base. (I'm thinking I might have a tall, dark secret admirer. Eewwe.)
On an old survival world of my friends, endermen would always teleport into my underground bunker carrying flowers or grass blocks. They were almost always flowers though, so I never killed them. Can't blame a giant monster for wanting to share some love.

Dirt blocks with grass are GRASS blocks. There is actually a difference. The grass block is being moved, not a dirt block. Think of stone and cobble: mine stone=cobblestone, mine grass block=dirt block.

They are not left in their sprite form. The flowers I'm finding are in their sprite form. This is why I was wondering, if endermen do "place" flowers the same as they do dirt and gravel but the block they place them on cannot support growth, do the flowers then pop out of the block the same way they would if you made them using bonemeal, on grass in a dark room? OR is is that, with flowers, the endermen drop them as drops rather than as placed blocks.
All the Wiki says is this (under Bugs): "When an Enderman places down a cactus or flower, it is not checked if it is being put on an appropriate block, possibly resulting in plants on unusual blocks." To me, this indicates that the flower left on my boardwalk (which was well lit) should have been "planted" on the "unusual block" rather than floating above it as a drop.

There is another occurance that could cause the loose flower drops everywhere and it has nothing to do with Endermen.
When the world generates, it generates certain things first, then other things later. For example, things like Ravines, Dungeons, Lava Pools, Mine Shafts, etc, are actually generated after the rest of the world is made. That is why you sometimes find them crossing one another or you find ore veins split in two by a mine shaft or something.
I'm completely sure about flowers but it could be possible that the game is generating the flowers where they should be able to be, then changing something when another thing generates.

I heard they never replace the blocks they pick up. They drop them if they die or get killed?
They mostly pick up blocks that people don't use for building, such as dirt, sand, flowers and the like. But they will put them back eventually, but if you kill them while they're holding the block then I do believe the block disappears.
I've been curious about them planting the flowers, but i've never seen flowers in odd place's yet.

When I first saw this, I thought, well that's puts a big whole in my theory because melons don't grow on wood blocks either... but then I remembered that a melons is also a craftable block from melon slices, so players could also place them on wood blocks.

I think this is right on the money. I think that on the XBox, enderman can place blocks that are placeable wherever they would actually be placeable. Therefore, in the case of flowers, I don't think they can place them where they would not normally grow - e.g. areas that are too dark or on blocks that don't support growth. I think they can plant them where they would grow, so that is why I don't notice them as sprites out in the middle of my plains. The flowers probably just move around a little without me noticing it.
I think probably too that if endermen try to place a mushroom where there is too much light, the mushroom would pop off and float in sprite form until it would naturally just disappear 5 minutes later if a player did not happen by to pick it up. I have run across the odd loose sprite mushrooms as well.
