I remember when the last update came out (with villages and such), it was mentioned that you needed to start a new world to get all the changes. Today, I loaded an old world and noticed that I now had a food bar and other various things within my old world. Does that mean that all of the new features transferred over?

There is a difference between user features like the hunger bar and terrain features like villages. As others have indicated, the update will not overwrite already generated terrain chunks. Terrain chunks are generated when you first explore that area of the map (within a certain distance - that is, you don't have to walk over every chunk to generate it as a few chunks around where you are get generated at the same time). If you have ungenerated chunks (i.e. areas of the map where you've never walked near), the game will generate those whenever you do get around to exploring them with whatever terrain would go into that chunk at whatever update your game is then at. So, if the unexplored chunk was slated to be forest in the current version, that's what would generate. If those chunks were slated to be a village post update, then a village would generate there... but, it's a crapshoot... no guarantees.
Personal features you get with every update as they come in. You now have a hunger bar. You can now use creative mode. You can now craft pumpkins into pumpkin seeds. You can now craft stone bricks. New mobs also spawn, regardless of whether or not you've fully explored your world. That is, you will now encounter endermen in your old world.
I'm going to be the berrar of bad news here what I can tell you. Anything you have unexplored you have a chance to spawn new Biomes however if already explored nothing new will be there and if you explored all the map like me then you can't get any new biomes or anything in that map.
E.G. for the sake of this there are 9 chucks
you have explored chunck 1,2,3,4 and 5,6,7,8,9 you have not now you go explore chunck 5 and 6 and save then hop off. 2 days later you hope back on and there is an update 1.8.2 and you do it now you go and explore chuncks 7,8,9 and then you find a village and a stronghold but they are in chucnk 7, 8 and 9 and you find no new biomes in chunck 1,2,3,4,5,6 because they have already been generated and there for will not change.
Unfortantly if you have already explored chuncks then you won't get anything new in them so if you have unexplored terrain then head for that on an old map if not then it probably not going to be much help looking for new biomes.
P.S hunger bar mods and crafting are going to be in your old world because they are part of the interface and there for can not be taken out of the world even if it was created befor the update as this means they would need different files for the different updates.
I had a pre 1.8 world and I found a ravine in an unexplored part
because the 1.82 generation took over

Religion, has actually convinced people, that there's an invisible man, living in the sky, who watches everything you do every minute of the day, and the invisible man has a special list. Of 10 things he doesn't want you to do. And if you do ANY of these ten things he has a special place, full of fire, and smoke, and burning, and torture, and will send you there to suffer and choke and scream for all of eternity... But he still loves you.
