So if we have to create a new world to get strongholds and such for the latest update, will we have to do it again for TU7 and TU8? Is it a good idea to start a new world now and start preparing to enter The End (supplies, equipment, items for end portal, etc) or will we have to create another new world before/when TU8 comes?
If you have explored your entire world, you will need to start a new world for TU7 to get the mushroom biomes. Similarly, to get jungles in TU8, you will need to start a new world. If you have not explored your entire world, there is a SLIM chance that these biomes will generate to some degree in your old world; but the result may not be very pleasing or practical. That is, the new biomes may not blend very well with the old ones. I am not certain about the End itself.
If you do opt to start a new world with each update, you will probably be happier with how the world goes together upon first generation of the terrain, including the new biomes.
no... There has to be at least 2 villagers in the village for anymore to show up. At least from what I know of on the pc. But one thing is for sure you will have to reload or recreate worlds to have villagers, unless you are able to use spawn eggs for them in the later update.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.

You could wait till the update but when new biomes are introduced the world generation changes. What that means is the places you already explored would be different if you would load up the same seed again after the update. Thus, being a very slim chance that the places you've already explored could be where the end portal should be. It's up to you whether or not you want to make a new world, but i would wait keep playing with your same world now until the 1.2.3 update comes and then make a new world.
