Erm.. You realize.. This is the XBOX Edition section where we do not have silver or platinum... And I don't think silver is in Minecraft anyway, I know it is in Tekkit.
I used to skip coal pretty often, then I figured out if you want a good supply of smooth stone, you're going to need a lot of coal.
These days, if I skip anything, its redstone. Not as bad as before 1.8.2, but when I have a double chest overflowing with redstone dust, I tend to ignore it unless I am going through it. Still searching for a good slime farm area... Not that I only use redstone for piston stuff, but that's where I seem to be stuck these days.
Coal and redstone you will always get in vast quantities, after the first stack or two I never mine more

Its is used for the blue dyes. For building, I like to use the actual Lapis blocks as pillars. If you stack them one by one on top of each other, they seem to almost blend with the textures into a blue pillar.
