None. I only bypass ores when mining out an area, then go back and collect it all. Never can have too much of any resource, even if the vault is overflowing.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
Redstone. Its pretty useless to me. Coal is the most important since you have to have something to cook iron and gold in. Also gold is NOT useless. Thats the only way to make a decent minecart ride and make a rich looking building or something.
I use it all. Coal goes towards stone bricks for my underground houses, iron goes towards my tools and armor, lapis goes towards carpets and occasionally trading in servers, redstone is used in my awesome redstone creations, I usually use gold for potions, apples, beacons or blocks, and diamond goes towards enchanting as well as my godly weaponry.

I try not to bypass any as you never know when you may need it but if anything I would probably pass up redstone, I don't make huge redstone creations I barely use redstone honestly and never more than a pile in a project. I know a lot of people are very tempted to pass coal a lot I try to always collect it tho, I do have a tree farm and could rely on charcoal but to me it's more work to make charcoal than just mine coal in the first place.
I don't always bypass ores, but when I do, it's coal.
