So, I'm on the Xbox 360 version and whenever I make a new world it's either very small or underneath water, like all the land is underneath water, why is this? Then on my friend's account, it loads a normal world, how can I fix this?
To answer the first question, that land under water bit, if it is extremely deep is an Ocean biome. Now if it is shallow water then it is part of a nearby Swamp biome.
As the the second question there truly is no way to fix it. Either try random Names places or words input into the seed number to see the results or keep at the random generation like the person above me mentioned. I myself had to go through a ton of ones I did not like before I found a few I did. You could scout in creative mode, creating the new map in creative and fly around for a quick check of the terrain, and then if it is something you like save and exit then get to the loading screen to get the Seed number. After that input the seed # in when you generate a new world. Else just delete it and continue your search.
As of now it is a pretty tedious process, but eventually you'll find something.

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
I found to start with, on the 1.8.2 update, that the randomly generated seeds were mostly ocean biome seeds. Nothing of any use, or interest. I then did what Tamorr said and started using creative to scout for a decent seed.
I'm using one at the moment, I think it's called decent seed (type it in the seed generator). Sounds simple, yeah, but it worked. Huge mineshaft and stronghold.
The best thing to do if you still struggle, is do what Izuela said, and visit the seed thread. There's loads of suggestions on there.
I've never used "seeds". I just let it make one on it's own randomly and never had a problem with "weird worlds". They always seem to end up "average" with everything.
I had to try 12 maps before I found one I liked and then I ended up not liking it and had to search another 8 to 10. I finally found one I like. Its pretty crazy how many maps I found that are all or mostly water. I know its random, but who wants a map like that?
