None of my melon or pumpkin stems want to grow, and I've used bonemeal to speed up the stem part, and still no plants sprout from them. I play the of version of Minecraft regularly and have them growing in a pc world just fine.
Now I haven't played the pc pre 1.0, but are melons and pumpkins unable to grow in taiga biomes pre 1.0, because that is the only thing that I can think of even though I can grow them in taiga biomes just fine on the pc version. Also this problem has been before and after the Xbox update from today.

I did a skyblock and grew melons/pumkin up there(post update world), only thing i noticed was the fact that the melons had to grow onto dirt that was it....
I can't remeber if i tilled the area that they were to grow on to or not.

I had this problem when I first got melon and pumpkin seeds. I was waiting for ages, and only had stems growing. It was weeks before I realized that you have to leave an empty dirt space next to the seedling (DUH!). . . as you've played the PC version, I guess that this isn't the problem you are having?
I've honestly never tried to grow them in a tiaga biome. I wonder if they won't grow onto the dirt block if it happens to snow on it? Perhaps placing torches such that the snow melts on the adjacent dirt blocks will prompt the stems to sprout their pumpkims and melons.
Far as I know if you grow outside on taiga with snow... The pumpkins will not grow on snow, only when the snow is clear will they. Not confirmed myself, but that is how it was/is in the PC version that I played. Best bet is to enclose the area, if not light it up so snow doesn't form. Also like everybody else mentioned it must be a dirt block next to it as well.
